* Dictionary of Greek Coffee
Coffee: Greek coffee is made from beans ground very fine, to the consistency of, almost, powder
Briki : (pronounced bri ki) briki is the coffee pot for Greek coffee.
Kaimak: (pronounced kaema ki) this is the thick layer froth which forms on top of the coffee as it nears the boil. It should not be disturbed when pouring the coffee.
Katakathi: (pronounced kataka the) There will always be thick sediment at the bottom of the cup. Greek coffee is served with the grounds that settle at the bottom of the cup, so, the whole cup can not be drunk.
Flytzanaki: (pronounced fletzana ki) this the traditional coffee cup very similar to the cup that espresso is served in.
Preparing Heavy Coffee
(kafe vare glyko)
Ingredients:
# 1 small cup Water
# 1½ teaspoons of Sugar
# 1 teaspoon of Greek Coffee
Preparation:
Put the hot water in the briki to heat. While its getting hot, add the sugar and coffee and stir. As soon as the mix starts boiling it starts rising. As soon as it rises to the rim of the pot, remove immediately so as not to spoil the froth and coffee and stir.

Cauvery:
Lifeline of the south, Cauvery bubbles up from Talacauvery and reaches ground level at Bhagamandala, 39 kms to the west of Medikeri. One of the seven major rivers of India, Cauvery is the ' Dakshina Ganga' or ' Ganga of the south'.
Coffee:
Coffee, the pause that refreshes is grown extensively in Kodagu / Coorg on plantations that dot most of the hillsides, with coffee, orange, black pepper and cardamom at the bottom of the slopes, under canopies of huge trees
Well maintained with modern curing and irrigation, these plantations exude a heady fragrance in April, when the coffee bushes blossom. Coffee picking time is from November to March.

AP Forest Development Corporation COFFEE! : Kaveri Variety of Coffee
Andhra Pradesh has non-traditional areas for growing coffee. Coffee is grown here in the Eastern Ghats, agency areas of Chintapalli, Paderu and Maredumilli of Visakhapatnam and East Godavari Districts.
The main objective to introduce coffee was to wean away the tribals from felling of forests for shifting cultivation (Podu) by providing them with gainful employment and thus to protect the catchment area of Sileru River by proper soil and moisture conservation.
The AP Forest Department had raised coffee platations over an area of 1296 ha. as an under crop from 1960 to 1978. These plantations were handed over to AP Forest Development Corporation for maintenance. Further, during the perid from 1978 to 1984, APFDC had also raised the plantations to an extent of 2716.18 ha. Thus, at present with 4012.18 ha., of coffee plantations, APFDC is the single largest grower of coffee in Andhra Pradesh and also in the non-traditional areas.
The yield per hectare from APFDC Plantations is more than 300 kgs which is much more when compared to 140 kgs / Ha obtained by private growers. In order to improve the yields from these plantations further, i.e., upto 600 - 800 kgs., per hectare, APFDC has embarked upon a programme of planting high yielding variety of coffee known as "Kaveri". ...

Chicory Coffee
Chicory coffee is made from the root of the chicory (Cichorium intybus) plant. The plant was brought to North America in the 1700's and grows like a weed in many parts of the U.S. The plant is in the same family as raddicchio and endive.
The chicory root is roasted and ground to make a coffee substitute. It has been used throughout the centuries when coffee was scarce or just too expensive. Today it is blended with ground coffee and sometimes served pure. It is still a popular drink in Louisiana.
